Feta And Tomato Spread
1/3rd block or about 4 tablespoons of low sodium, good quality feta, crumbled
2 medium firm tomatoes, diced very small
2 radishes, diced small-optional
2 green onions, in thin slices, using both the white and green parts of the onion
Dill weed, chives, cilantro- a few sprigs of each, chopped
Pinch of basil
4 slices of spicy Mexican or your favorite hard, spicy salami, finely chopped
Drizzle of good quality olive oil (drizzle for all of the above is about ½ teaspoon)
Baguette of choice, sliced
Combine ingredients, pile onto sliced fresh baguette, enjoy. Also good if the baguette slices are toasted bruschetta-style. This is also great on warm, grilled Naan bread. Seriously, are you drooling yet?
Special note: eat this right away as it does not keep well.
Variation: Use your favorite grated cheese in lieu of the feta. After combining all ingredients and piling onto bread slices, pop into oven at 350 degrees until the cheese is starting to melt and bubble- about 20-25 minutes.
