Feta and greens
2 cups mixed greens of your choice (I often buy the already mixed type in a plastic container. Make sure it has spinach).
10 large strawberries, washed, trimmed and cut in half
1/2 cup of slivered almonds
1/2 cup raspberry vinaigrette salad dressing (such as Kraft)
1 tablespoon honey mustard (optional)
1 clove minced garlic
fresh chives (optional- I just happen to have them in my garden)
1/2 cup crumbled feta
Prep:
In a 325 degree oven, toast the slivered almonds, watching carefully until they just start to turn golden. Remove immediately from the pan and allow to cool.
For the salad dressing- you can use the vinaigrette on its own, but mix it with the minced garlic, or you can also mix in the honey mustard- this gives it just a fabulous flavor and I highly recommend it.
To serve:
Mix the greens and strawberries. Only when you’re ready to eat, pour on the dressing (you may not need all of it- you don’t want it to drown!). Then top with slivered almonds, chives and the feta. This is also excellent with sliced, grilled chicken or steak.
